Barrio Fiesta Lechon Kawali PDF Print E-mail

Ingredients:

1 pack (40 g)      Barrio Fiesta Lechon Kawali Seasoning Mix

1 kg                  Pork Belly (Liempo)

3 cups               Water

 

Procedure:

 
  1. Wash and clean pork belly (liempo) in running water and drain.
  2. Dissolve Barrio Fiesta Lechon Kawali Seasoning Mix in 1 cup of water. Marinate the meat, ideally, for 12 hours while being refrigerated.
  3. After marinating, wash the meat with 2 cups of hot water to defrost and remove excess salt.
  4. Fill pot with cooking oil, add pork belly (liempo), and bring to boil (105-120 °C) under low flame. Pre-fry the marinated meat for 35-40 minutes or until cooked. The color must be golden brown and blisters must appear. Turn meat several times to avoid uneven cooking. Set aside the pre-fried meat.
  5. Increase cooking oil into high temperature (190 °C) and deep fry the “pre-fried meat” for 3-4 minutes until skin is crunchy.
